Christmas Cooking, Chocolate Yule Log Recipe.

   I love cooking at this time of year, I don't know why, but I get quite excited about it, so  this morning I deiced to go off to the shops and buy ingredients to make a chocolate yule log I make one every year and have done so since I was a teenager, you can buy them in the shops ready made, but there is nothing like a home baked one. I have made one now and I will make another  one closer to the big day itself because I don't think that the one I made above will last that long. So here is the recipe have fun.

3 Eggs 
85g caster sugar
85g plain flour
2tbsp cocoa powder
half a tsp of baking powder

for the filling and icing

50g butter
140g  dark chocolate
1 tbsp golden syrup
284ml double cream
200g icing sugar


Heat oven to gas mark 6,  grease a square swiss roll tin and line with baking paper, beat 3 eggs in a bowl together with the sugar, with a whisk for about 8 mins until thick and creamy.

Mix the flour and cocoa powder together the sift onto egg mixture and with a metal spoon fold, pour mixture into tin. bake for 10 mins, lay a sheet of baking paper flat onto a surface, when cake is cooked lay it onto flat baking  paper and very carefully roll it up and leave to cool.

To  make icing, melt 50g butter and 140g dark chocolate together in a bowl over a pan of hot water, take off heat stir in golden syrup and 5tbsp of double cream beat in 200g icing sugar until smooth.

Whisk the rest of the cream, until thick.  unwrap cake and spread the cream in the middle then roll up again into a log shape. 

Spread the icing  over the log (don't cover the ends) then use a fork to make tree marking's, decorate as you wish. And enjoy.

Four Days In Florence.

International Women's Day. Who Is Your Inspirational Women.

This is Anna, my Grandmother, and I have chosen her as my Inspirational women for International Women's day 2019.    Anna, my Grandmother was born in April 1907 on the East Coast of Italy, in another time, and another place, long before I was even thought of.  I have chosen my Grandmother today  because she was a strong confident women who had a hard life with no money no decent home and sometimes no shoes on her feet as she used to tell me.  My Grandmother got married at 18 in Pink and had four daughter's the youngest of whom was my own Mother.  My Grandfather was a farmer/soldier and when the second world war broke out my Grandfather was in the war, my Nan as I always called her, was on her own in war torn Italy with four daughter ages ranging from 13 downwards to 6 years old,  if we think of poverty in our towns and cities today according to my Nan's  standards they where horrendously poor only eating what they could grow and what they could kill.  During the war for…
